Instructions
1-Preheat the oven: preheat the oven to 350Β°F and position the rack in the middle. Line a baking sheet with aluminum foil and spray with nonstick cooking spray.
2-Prepare the vegetables: roughly chop the onion, carrot, celery, and garlic, and pulse them in a food processor until finely minced but not pureed.
3-Cook the vegetables: heat olive oil in a medium skillet over medium heat, add the minced vegetables, and cook for 5 to 7 minutes until softened without browning.
4-Cool the vegetables: let the vegetables cool until just warm.
5-Mix ingredients: In a large bowl, whisk eggs with basil, salt, pepper, and Worcestershire sauce. Add the meat, bread crumbs, cheese, and cooked vegetables to the bowl, then mix by hand until evenly combined.
6-Shape and sauce the meatloaf: Shape the mixture into a 9Γ5-inch loaf on the prepared baking sheet and spread ΒΎ cup marinara sauce on top, letting some drip down the sides.
7-Bake the meatloaf: bake for 65 to 70 minutes or until an instant-read thermometer reads 160Β°F in the center.
8-Rest and serve: Let the meatloaf rest for 10 minutes before slicing, remove any excess fat, transfer to a cutting board, and serve with additional marinara sauce if desired.
