Instructions

1-First Step: Prepare the Crust Combine 2 cups sifted all-purpose flour, 1 tablespoon sugar, and 1 teaspoon salt in a food processor and pulse to mix evenly. In a separate small bowl, whisk together 1 large egg, 1/2 teaspoon vinegar, and 1/4 cup ice-cold water. Add 3/4 cup cold unsalted butter pieces to the flour mixture, pulsing until coarse crumbs form. Gradually pour the egg mixture over the flour mixture and pulse until dough just begins to come together, being careful not to overwork it to maintain flakiness.

2-Second Step: Chill the Dough Remove the dough from the processor, wrap it tightly in plastic wrap, and refrigerate for about 30 minutes to firm up and relax the gluten. This helps keep the crust tender and easy to roll.

3-Third Step: Prepare the Berry Filling While the dough chills, prepare the filling by separately cooking the chopped strawberries (or raspberries) and blueberries with sugar, salt, and cinnamon over medium heat. Cook until the berries are softened and a syrupy mixture forms, about 10 minutes. Cool the fillings completely before use.

4-Fourth Step: Roll and Assemble Hand Pies Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper. Roll out the chilled dough on a lightly floured surface to roughly 1/4-inch thickness. Use a 2-inch round cutter to cut out even circles. Arrange half the circles on the baking sheets and spoon about 1 tablespoon of berry filling onto each. Moisten the edges with water before placing another dough circle on top.
