Instructions

1-Combine the honey and hot peppers in a medium sauté pan or saucepan to begin the infusion process.

2-Heat over medium heat until the honey just begins to simmer lightly, stirring to blend the flavors evenly.

3-Remove from heat and let the mixture rest for 10 to 15 minutes, allowing the heat to infuse fully.

4-Taste and adjust spiciness by adding more peppers or letting it sit longer if needed.

5-Strain the honey through a fine mesh strainer into a clean jar to remove the peppers.

6-If using, stir in the vinegar evenly for added tang.
