810 pounds fully cooked bone-in spiral ham

1 cup chicken stock or water

1 cup hot honey

4 tablespoons butter (1/2 stick)

1/2 cup light brown sugar

2 tablespoons mustard (hot or Creole preferred)

1 tablespoon garlic powder

Salt to taste

Black pepper to taste

Instructions

1-Begin by setting your oven to 325°F, which is the ideal temperature for warming the ham evenly and allowing the glaze to work its magic.

2-First, place the ham in a lightly oiled roasting pan with the cut side down and bake it uncovered for 90 minutes.

3-While that’s happening, prepare the hot honey glaze by combining 1 cup hot honey, 4 tablespoons butter, 1/2 cup light brown sugar, 2 tablespoons mustard, 1 tablespoon garlic powder, salt, and black pepper in a small pot. Bring this mixture to a boil, then reduce the heat and simmer for 5 minutes to let the flavors meld together nicely.

4-After the initial baking time, brush the ham with half of the glaze and add 1 cup of chicken stock or water to the pan to keep everything moist.

5-Continue baking for another 30 minutes, brushing on more glaze several times to build up that sticky, caramelized layer.

6-Once the internal temperature hits 140°F, take the ham out, let it cool a bit, carve it up, and brush on the remaining glaze for an extra flavor boost.
