1 3/4 pounds boneless skinless chicken breasts, cut into 1 to 1 1/4-inch cubes
3 cups fresh pineapple chunks
1 1/2 large green bell peppers, cut into 1 to 1 1/4-inch pieces
1 large red onion, cut into 1 to 1 1/4-inch pieces
1/3 cup ketchup
1/3 cup packed dark brown sugar
1/3 cup soy sauce
1/4 cup pineapple juice
4 tablespoons olive oil
1 1/2 tablespoons rice vinegar
4 cloves garlic, minced
1 tablespoon grated fresh ginger
1/2 teaspoon sesame oil
Salt and pepper to taste

Instructions

1. Whisk together ketchup, brown sugar, soy sauce, pineapple juice, olive oil, rice vinegar, garlic, ginger, sesame oil, salt, and pepper to make the marinade.
2. Reserve 1/2 cup of marinade for basting.
3. Coat chicken cubes in the marinade and refrigerate for at least 30 minutes, up to 4 hours.
4. Soak wooden skewers in water for at least 30 minutes.
5. Preheat the grill to 400°F (200°C).
6. Toss pineapple, bell peppers, and red onion with olive oil, salt, pepper, and reserved marinade.
7. Thread chicken and vegetables alternately onto skewers with small gaps in between.
8. Oil grill grates and grill kabobs for 12 to 16 minutes, turning frequently, and basting with reserved marinade.
9. Ensure chicken reaches an internal temperature of 165°F (75°C).
10. Serve warm and enjoy.
