Ingredients

– 2 tablespoons olive oil

– 1 pound ground turkey

– 1 teaspoon minced garlic clove

– ½ cup diced onions

– ½ cup diced yellow pepper

– 1 ½ cups diced sweet potato

– Salt, to taste

– Freshly ground black pepper, to taste

– 8 large inner leaves of romaine lettuce

– ¼ cup avocado or olive oil mayonnaise for Sriracha mayo

– 2 tablespoons Sriracha for Sriracha mayo

– Freshly squeezed lemon juice, to taste for Sriracha mayo

– Salt, to taste for Sriracha mayo

– 1 diced avocado for toppings

– Chopped green onions for toppings

Instructions

1-First, heat 2 tablespoons of olive oil in a skillet over medium-high heat, then add 1 pound of ground turkey and 1 teaspoon of minced garlic clove. Cook this for about 7 minutes, stirring occasionally until the turkey is browned.

2-Next, toss in ½ cup of diced onions and ½ cup of diced yellow pepper, and keep cooking until the onions turn translucent, which takes just a few minutes.

3-Now, stir in 1 ½ cups of diced sweet potato along with salt and freshly ground black pepper to taste. Cover the skillet and cook until the sweet potato is tender, adding a bit more oil or water if things start to stick.

4-While that’s simmering, mix up the Sriracha mayo by combining ¼ cup of avocado or olive oil mayonnaise, 2 tablespoons of Sriracha, freshly squeezed lemon juice, and a pinch of salt.

5-Once everything is ready, spoon the turkey mixture into 8 large inner leaves of romaine lettuce and top it off with chopped green onions, 1 diced avocado, and that zesty Sriracha mayo.
