Ingredients

– 1 pound (approximately 450 grams) ground beef

– 1 yellow onion, diced

– 1 tablespoon taco seasoning

– 2 cups (about 480 milliliters) enchilada sauce

– 8 enchilada-size tortillas

– 1 cup (about 100 grams) shredded cheddar cheese

– 1 cup (about 100 grams) shredded Monterey Jack cheese

Instructions

1-First, cook the ground beef, diced yellow onion, and 1 tablespoon of taco seasoning in a skillet over medium-high heat until the beef is no longer pink. Drain the fat to keep things light.

2-Next, mix the 1 cup shredded cheddar cheese and 1 cup shredded Monterey Jack cheese together in a bowl. Pour 1/2 cup (120 milliliters) of enchilada sauce into the bottom of your baking dish to create a base.

3-On each of the 8 enchilada-size tortillas, spoon the beef mixture down the middle and add about 1/8 cup (12.5 grams) of the cheese mix. Roll them up and place them seam side down in the baking dish. Repeat until all tortillas are filled.

4-Then, pour the remaining 2 cups (about 480 milliliters) of enchilada sauce over the top and sprinkle with the rest of the cheese. Bake for 15 to 20 minutes until everything is heated through and the cheese melts beautifully.

5-For extra flavor, try adding toppings like olives or green onions as suggested.
