Ingredients

3 pounds Yukon gold, Russet, red, or new potatoes
1 medium onion, thinly sliced
Salt and freshly ground black pepper to taste
Optional: garlic powder, smoked paprika, or ranch seasoning
2 tablespoons butter or olive oil
Optional toppings: shredded cheddar cheese, cooked bacon bits, sour cream, chives, jalapeΓ±os, fresh parsley or dill

Instructions

1. Preheat grill to medium heat, or oven to 375Β°F-400Β°F if baking.
2. Slice potatoes into ΒΌ inch slices or chunks and thinly slice the onion.
3. In a large bowl, combine potatoes and onion. Season with salt, pepper, and optional seasonings.
4. Divide seasoned potato mixture over several pieces of sprayed foil.
5. Dot with butter or drizzle with olive oil, then seal foil packets tightly.
6. Place packets on the grill and cook for 25-30 minutes, turning occasionally, or bake for 25-40 minutes.
7. Carefully open packets, add optional toppings like cheese and bacon, and reseal or leave open to melt cheese for an additional few minutes.
8. Serve hot with desired toppings like sour cream or chives.
