Ingredients

Ground cumin

Halibut fillets, 4 to 6 ounces each, ½-inch thick
Lemon wedges for serving

Instructions

1. In a small bowl, combine olive oil, minced garlic, lemon zest, lemon juice, kosher salt, black pepper, smoked paprika, ground cumin, and optional fresh herbs. Let sit for 10 minutes.
2. Pat halibut fillets dry and coat with the olive oil mixture evenly.
3. Preheat grill or grill pan to medium-high heat and lightly oil the grates.
4. Grill halibut for about 2 minutes per side over medium-high heat. Reduce to medium and continue grilling for another 2 to 4 minutes per side until cooked through.
5. Serve with lemon wedges and optionally top with garlic thyme butter or fresh herb sauce.
