Instructions
1. Combine marinade or dry rub ingredients in a large bowl or resealable bag. Add chicken thighs and toss or seal to coat evenly.
2. Marinate at room temperature for at least 15 minutes or refrigerate for 30 minutes up to 12 hours for better flavor.
3. Preheat grill to medium-high heat (about 375 to 400°F). Clean and oil grill grates to prevent sticking.
4. If refrigerated, bring chicken to room temperature for 10 minutes before grilling.
5. Place chicken thighs smooth side down on the grill, shaking off excess marinade or rub. Cook over direct medium-high heat for 4 to 7 minutes per side.
6. Flip chicken once and continue cooking until the internal temperature reaches 160°F–165°F. Use a meat thermometer for accuracy.
7. Remove from grill, cover loosely, and let rest for at least 5 minutes for juices to settle.
8. Serve with fresh herbs and a squeeze of lemon or lime juice, if desired.
