4 small boneless, skinless chicken breasts (about 6 ounces each), tenderloins removed
2 cups pickle juice (enough to cover chicken)
3/4 teaspoon garlic powder
3/4 teaspoon paprika
1/8 teaspoon cayenne pepper
Olive oil spray or brush
4 whole wheat or potato rolls
12 dill pickle chips
For the slaw:
1 1/2 cups thinly sliced red and green cabbage
1/2 cup shredded carrots
1 teaspoon Dijon mustard
2 teaspoons red wine vinegar
1 teaspoon olive oil
1/8 teaspoon salt
For the spicy mayo:
4 tablespoons mayonnaise
1 tablespoon hot sauce (such as sriracha, adjustable to taste)

Instructions

1. Pound chicken breasts to an even thickness of about 1/2 inch to ensure uniform cooking.
2. Marinate the chicken in pickle juice in the refrigerator for 4 to 8 hours.
3. Mix mayonnaise with hot sauce to create spicy mayo, and set aside.
4. Prepare the slaw by whisking vinegar, olive oil, Dijon mustard, and salt, then toss in cabbage and carrots. Chill.
5. Preheat the grill to high and lower to medium-low before cooking.
6. Combine garlic powder, paprika, cayenne pepper, and salt. Lightly oil the chicken and season both sides.
7. Grill the chicken for 4 to 5 minutes per side until the internal temperature reaches 165°F.
8. Optionally, toast the rolls on the grill.
9. Assemble sandwiches with spicy mayo, slaw, grilled chicken, and pickle chips. Serve immediately.
