Ingredients
1 pound cooked potato gnocchi
1.5 pounds boneless, skinless chicken thighs, seasoned with salt, pepper, and paprika
5 tablespoons butter or ghee
1 medium yellow onion, diced
1 cup white mushrooms, diced
2 tablespoons minced garlic
1 teaspoon Italian seasoning
1 cup chicken broth
1/2 cup half-and-half or heavy whipping cream
1/2 cup shredded mozzarella cheese
3 cups spinach
Optional garnishes: red pepper flakes, shredded Parmesan, chopped parsley
Instructions
1-Boil the gnocchi: Cook 1 pound potato gnocchi per package directions, drain, and set aside.
2-Brown the chicken: Season 1.5 pounds boneless, skinless chicken thighs with salt, pepper, and paprika. Heat 2-3 tablespoons butter or ghee in a large skillet over medium-high. Brown chicken 5-10 minutes per side until cooked through (165°F internal). Remove and set aside.
3-Saute aromatics: Melt remaining 2-3 tablespoons butter. Add diced medium yellow onion, 1 cup diced white mushrooms, 2 tablespoons minced garlic, and 1 teaspoon Italian seasoning. Saute 3-4 minutes until softened.
4-Build the sauce: Whisk in 1 cup chicken broth and heat 1 minute. Gradually add 1/2 cup half-and-half (or heavy cream) and 1/2 cup shredded mozzarella, whisking until thickened.
5-Combine and simmer: Fold in cooked gnocchi and 3 cups spinach. Adjust salt and pepper. Return chicken to skillet and simmer 2 minutes until heated through.
6-Serve: Garnish with red pepper flakes, shredded Parmesan, and chopped parsley.
