Ingredients

1.5 pounds sirloin steak or ribeye, cut into 1-inch cubes
1 red onion, cut into chunks
Optional: mushrooms, bell peppers, cherry tomatoes, asparagus
Salt and black pepper to taste
For the marinade:
1/2 cup unsalted butter, melted
3 tablespoons olive oil
3 tablespoons fresh lemon juice
1 tablespoon tomato paste
23 cloves garlic, minced
Chopped fresh parsley
Skewers (soaked for 30 minutes if wooden)

Instructions

1. Season steak cubes with salt and pepper. If marinating, combine butter, olive oil, lemon juice, tomato paste, garlic, and parsley in a bowl.
2. Add steak and optionally vegetables to the marinade; mix well. Marinate for at least 30 minutes if time allows.
3. Preheat the grill to medium-high heat (375°F to 450°F). Thread steak and vegetables onto skewers.
4. Grill kabobs for about 9 to 12 minutes, turning occasionally, until cooked to preferred doneness.
5. Let kabobs rest for 5 minutes to retain juices.
6. Melt additional butter with garlic and parsley, and brush over kabobs before serving.
