🎉 These Funfetti Shortbread Bites bring a joyful burst of colorful sprinkles in every tender, melt-in-your-mouth bite.
🍪 Perfect for celebrations or anytime you want a delightful treat that’s both fun and flavorful.

  • Total Time: 1 hour 3 minutes
  • Yield: Approximately 120 small bites

Ingredients

– 1 cup salted butter, softened to room temperature

– ½ cup granulated sugar

– ¼ cup powdered sugar

– Pinch of table salt

– 1 teaspoon vanilla extract

– 2 ¼ cups all-purpose flour (use 2 cups flour initially if at high elevation or in a dry climate; add more only if dough is sticky)

– 1 tablespoon cornstarch (optional, for extra tenderness)

– 3 tablespoons nonpareil sprinkles (tiny round sprinkles; substitute with other small sprinkles, mini chocolate chips, toffee bits, or omit entirely)

Instructions

1-First, combine 1 cup salted butter, ½ cup granulated sugar, and ¼ cup powdered sugar in a bowl until smooth and creamy this creates the base for your dough’s tender feel.

2-Mix in a pinch of table salt and 1 teaspoon vanilla extract to add that extra flavor boost, blending until everything is evenly incorporated.

3-Add 2 ¼ cups all-purpose flour and 1 tablespoon cornstarch (if you’re using it), mixing until just half combined, then gently fold in 3 tablespoons nonpareil sprinkles to keep them from breaking or bleeding color.

4-Press the dough into a ¼-inch thick rectangle on a parchment-lined baking sheet, and feel free to press on extra sprinkles for more fun. Pop it in the fridge for 30 minutes to chill this step is a game-changer to prevent spreading.

5-Preheat your oven to 375°F (190°C), then cut the chilled dough into ¼- to ½-inch squares and arrange them on parchment-lined baking sheets, spacing them out a bit.

6-Bake for 7-9 minutes until set, or go 1-2 minutes longer if you want them extra crispy keep an eye on them to get it just right!

7-Let the bites cool completely on the sheet before diving in, as this helps them firm up and stay delicious.
