Ingredients
– 10 oz. spring mix (combination of lettuces like red butter leaf, baby butter lettuce, arugula, or any preferred blend)
– 8 oz. ciliegine cheese (small fresh mozzarella balls)
– 2 large avocados, diced
– 1 pint cherry tomatoes, halved or quartered
– 1 red bell pepper, seeded and diced small
– ½ red onion, diced small
– ½ cup pine nuts or sunflower seeds (optional: toasted)
– Salt and pepper to taste
– ¾ cup extra virgin olive oil
– ¼ cup champagne vinegar
– 2 tablespoons finely minced shallots
– 2 tablespoons fresh lemon juice
– 1 to 2 tablespoons honey
– 2 teaspoons Dijon mustard
– ¼ teaspoon garlic powder OR ½ teaspoon minced garlic
– Kosher salt and freshly ground black pepper to taste
Instructions
1-Top the lettuce with the ciliegine cheese, diced avocado, cherry tomatoes, diced red bell pepper, diced red onion, and pine nuts or sunflower seeds if you’re using them. Don’t forget to add a bit more salt and pepper if you like.
2-Next, whip up the dressing in a small bowl by whisking together the olive oil, champagne vinegar, minced shallots, fresh lemon juice, honey, Dijon mustard, garlic powder or minced garlic, salt, and pepper until it’s all mixed well. You can also shake it in a sealed jar for ease!
3-Pour that homemade dressing over your salad ingredients and toss gently to coat everything evenly. It’s that simple, and you’ll love how the flavors blend.
