1 teaspoon dried thyme
Β½ teaspoon dried oregano or 1 teaspoon dried rosemary

Β½ teaspoon freshly ground black pepper
1Β½ teaspoons lemon zest or 23 tablespoons lemon juice
Optional: 2 tablespoons brown sugar
Chopped fresh parsley for garnish

Instructions

1. Place each chicken breast into a large zip-lock bag or between plastic wrap and pound to an even thickness of about Β½ inch.
2. Mix olive oil, garlic, dried herbs, salt, pepper, lemon zest, and optional brown sugar to form the marinade.
3. Add the chicken to the marinade, seal the bag, and ensure they are evenly coated.
4. Marinate in the refrigerator for at least 4 hours, preferably overnight.
5. Preheat grill to medium-high heat and oil the grates.
6. Remove chicken from marinade, allow excess to drip off, and place on the grill.
7. Grill chicken for 2 to 6 minutes per side until internal temperature reaches 155-160Β°F.
8. Baste with reserved marinade during cooking if using a balsamic-based version.
9. Rest chicken for 3 to 5 minutes before serving.
