6 tablespoons extra virgin olive oil
1 teaspoon dried thyme
Β½ teaspoon dried oregano or Italian herbs
1ΒΌ to 1Β½ teaspoons kosher or sea salt
Β½ teaspoon freshly ground black pepper
1Β½ teaspoons lemon zest or 2Β½ tablespoons red wine or balsamic vinegar
Optional: 1 to 2 tablespoons brown sugar
Fresh parsley, chopped, for garnish

Instructions

1. Prepare chicken by slicing and pounding into even thickness.
2. In a bowl or bag, mix olive oil, garlic, herbs, salt, pepper, lemon zest or vinegar, and optional brown sugar. Reserve ΒΌ cup marinade for basting.
3. Marinate chicken for at least 30 minutes, up to overnight.
4. Preheat grill to medium-high, oil grates.
5. Remove chicken from marinade, grill 2-4 minutes per side. Baste with reserved marinade.
6. Cook to 165Β°F internal temperature, then rest 3-5 minutes.
7. Garnish with parsley before serving.
