750g to 1.5 lb beef tri-tip, sirloin steak tips, or boneless top sirloin steak, cut into cubes
2 to 3 bell peppers (red, yellow, green), cut into cubes
1 large red onion, cut into similarly sized pieces
16 small mushrooms (optional)
Olive oil or neutral vegetable oil for cooking and drizzling
Flat metal skewers or soaked bamboo skewers
Minced garlic or garlic powder
Onion powder
Soy sauce
Worcestershire sauce
Balsamic vinegar or apple cider vinegar
Honey or sugar (optional)
Black pepper
Chipotle chili powder or chili powder (optional)
Additional spices (cumin, smoked paprika, cayenne pepper) optional
Instructions
1. Cut the beef and vegetables into uniform cubes for even cooking.
2. In a bowl, combine marinade ingredients and add the beef cubes. Marinate for at least 20 minutes or up to 24 hours for more flavor.
3. Soak wooden skewers if using to prevent burning.
4. Thread beef cubes alternately with bell pepper, onion, and mushrooms. Place two vegetable pieces between each beef piece for balance.
5. Brush skewers with reserved marinade and drizzle with oil.
6. Preheat grill, broiler, or skillet to high heat. Oil the cooking surface.
7. Grill or broil kabobs for 2 to 5 minutes per side, turning evenly, until desired doneness. Use a skillet for indoor cooking if preferred.
8. Let kabobs rest for 3 to 5 minutes under foil to redistribute juices before serving.
9. Garnish with parsley if desired and serve with optional sauce.
