19.1 ounce package of chocolate sandwich cookies

8 ounce package cream cheese, softened to room temperature

1 package vanilla candy coating

Assorted colored candy melts (bright pink, blue, yellow recommended)

Assortment of brightly colored sprinkles

Instructions

1-Finely crush the chocolate sandwich cookies using a food processor or by placing them in a sealed bag and crushing with a rolling pin.

2-Combine the cookie crumbs and cream cheese in a large bowl and blend with a hand mixer until it forms a thick paste.

3-Using a 1 ½ tablespoon cookie scoop, form the mixture into balls and gently shape into eggs.

4-Place the eggs on a parchment-lined sheet pan and freeze for 30 minutes.

5-Melt the vanilla candy coating and candy melts in separate microwave-safe bowls in 30-second increments until smooth. Work with one color at a time.

6-Dip each egg into the melted coating using two forks and gently shake off excess.

7-Place the dipped eggs on parchment paper and immediately add sprinkles. Optionally, drizzle melted candy melts over the finished eggs.

8-Repeat with all eggs, then enjoy.
