2 cups unsweetened fine shredded coconut

14 ounces sweetened condensed milk

2 tablespoons melted and cooled butter

1 teaspoon vanilla extract

1/4 cup confectioner’s sugar

Instructions

1-In a large bowl, whisk together 14 ounces of sweetened condensed milk, 2 tablespoons of melted and cooled butter, and 1 teaspoon of vanilla extract until fully combined.

2-Add 5 cups of unsweetened medium shredded coconut and 1/4 cup of confectioner’s sugar, then stir well until the mixture is evenly mixed.

3-Chill the mixture in the refrigerator for 15 minutes to make it easier to handle.

4-For coloring, place 1/2 cup of unsweetened fine shredded coconut in a bowl, add 3-4 drops of liquid food coloring, and mix with a hand-held mixer until the color is evenly distributed. Repeat for each color you want.

5-After chilling, portion the coconut mixture into balls, each about 1 1/2 teaspoons in size.

6-Roll the balls in the colored fine shredded coconut to coat them completely, giving them that fluffy bunny tail look.

7-Place the coated balls on a baking sheet and chill them in the refrigerator for one hour to set and firm up.

8-Store the balls in the refrigerator and remove them a few minutes before serving for the best texture.
