  • Total Time: 1 hour 15 minutes
  • Yield: 12 servings 1x

Ingredients

Scale

20 Medjool dates, pitted and soft

1/3 cup creamy peanut butter

1/2 cup raw peanuts

1 1/2 cups chocolate chips

1 teaspoon coconut oil

Pinch of flaky salt

Instructions

1-First, slice the dates open and remove the pits, then flatten them and line them up on a parchment-lined baking sheet.

2-Next, spray the bottom of a drinking glass with oil and press down on the dates to flatten them evenly.

3-Drizzle the creamy peanut butter over the flattened dates, then sprinkle with crushed raw peanuts.

4-In a small bowl, combine the chocolate chips and coconut oil; melt them in the microwave in 2-3 increments of 30 seconds, stirring between each.

5-Pour the melted chocolate over the date and peanut layer, fully coating it.

6-Refrigerate for 1 hour or freeze for 35 minutes until the chocolate sets, then sprinkle flaky salt on top, break the bark into pieces, and enjoy.

Notes

🍬 Use pitted Medjool dates to provide natural sweetness and optimal texture.
🥜 Raw peanuts add a satisfying crunch, working better than crunchy peanut butter alone.
🧈 Coconut oil helps melt the chocolate smoothly and ensures it sets well when chilled.
🧂 Flaky salt balances the sweetness with a pleasant hint of saltiness.
🌰 Experiment with different nuts like cashews or walnuts, or try dark chocolate instead of regular chocolate chips.
🥥 For coconut oil allergies, avocado oil can substitute, but it might slightly affect texture.
🔨 To crush dates evenly, place parchment paper on top and press with your hand or a glass without additional tools.
