2 English cucumbers
2 cups grape or cherry tomatoes
1 medium red onion, thinly sliced
2 tablespoons olive oil
1 tablespoon red wine vinegar or balsamic vinegar

1 tablespoon fresh parsley, basil, or dill, chopped
Optional: 1 teaspoon honey or pinch of sugar
Optional: 1/2 cup crumbled vegan feta or mozzarella balls
Optional: 1 avocado, diced

Instructions

1. Slice the English cucumbers and tomatoes in even pieces. Thinly slice the red onion.
2. In a small bowl, whisk together olive oil, vinegar, salt, and pepper until emulsified. Add honey or sugar if using.
3. Combine the cucumbers, tomatoes, red onion, and fresh herbs in a large mixing bowl.
4. Pour the dressing over the vegetables and toss gently to ensure everything is well coated.
5. Add optional ingredients like vegan feta or avocado if desired.
6. Cover the salad and refrigerate for at least 20-30 minutes to allow the flavors to meld.
7. Serve chilled or at room temperature, draining any excess liquid before serving if needed.
