Ingredients

– 2 lb ground beef (about 900 g)

– 1 large yellow onion, finely minced (about 1 cup / 150 g minced)

– 2 boxes dried stuffing mix (6 oz each; total 12 oz / about 340 g)

– 1 1/3 to 1 1/2 cups whole milk (320 to 360 ml)

– 2 large eggs

– 2 tablespoons brown sugar-ketchup glaze (reserve from glaze recipe; about 30 ml)

– 1 teaspoon kosher salt (5 ml)

– 1/2 teaspoon black pepper (2.5 ml)

– 1 1/2 cups ketchup (360 ml)

– 1/4 cup light brown sugar (about 50 g)

– 2 tablespoons finely minced onion (30 ml)

– 1 tablespoon yellow mustard (15 ml)

– 2 teaspoons white vinegar (10 ml)

– 1/2 teaspoon black pepper (2.5 ml)

Instructions

1-Step 1: Prep the Slow Cooker Line a 6-quart (or larger) slow cooker with heavy-duty aluminum foil, pressing it into the bottom and up two sides. Lightly spray the foil with nonstick cooking spray. This makes removal and cleanup easy, plus supports broiling.

2-Step 2: Make the Glaze Whisk all glaze ingredients in a small bowl: 1 1/2 cups ketchup, 1/4 cup light brown sugar, 2 tablespoons finely minced onion, 1 tablespoon yellow mustard, 2 teaspoons white vinegar, and 1/2 teaspoon black pepper. Set aside. Reserve 2 tablespoons of the glaze (about 30 ml) for the meat mixture.

3-Step 3: Mix the Meatloaf In a large bowl, combine 2 lb ground beef, 1 large yellow onion finely minced (about 1 cup / 150 g), 2 boxes dried stuffing mix (total 12 oz / 340 g), 1 1/3 to 1 1/2 cups whole milk, 2 large eggs, reserved 2 tablespoons glaze, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper. Mix gently with hands until just combined; do not overwork. Wear gloves for easier, cleaner mixing.

4-Step 4: Shape and Cook Shape into an oval loaf and place on the foil in the slow cooker. Spread 1/2 cup (about 120 ml) glaze over the top. Cover and cook on low for 6 hours (or high for ~3 hours) until cooked through to 160ยฐF internal temperature.

5-Step 5: Finish with Glaze Lift the meatloaf using the foil and place on a baking sheet. Spread about 2/3 cup (160 ml) glaze over top and broil until sticky and bubbly. Watch closely to avoid burning.

6-Step 6: Serve Slice and serve with extra glaze on the side. Pair with sides like slow-cooked beef noodles in savory gravy for a hearty meal.
