Instructions

- Spray a 6-quart oval slow cooker with cooking spray to prevent sticking.

- Arrange 2 lb boneless skinless chicken breasts in a single layer on the bottom and season evenly with 1 tsp poultry seasoning, 1 tsp granulated garlic or garlic powder, 1/2 tsp salt, and 1 tsp lemon pepper.

- In a skillet over medium-high heat, melt 4 Tbsp butter, then add 1 medium onion (diced) and 1 rib celery (diced); cook until softened and lightly browned for about 3-5 minutes, and season with black pepper to taste.

- In a medium bowl, whisk together 1 (10 oz) can cream of chicken soup, 1 (10 oz) can cream of celery soup, 1 cup low sodium chicken broth or chicken stock, and 1 (0.8 oz) package dry chicken gravy mix.

- Cover the slow cooker opening with doubled paper towels, then place the lid firmly on top.

- Cook on HIGH for 3-4 hours or on LOW for 6-7 hours until everything is tender and flavorful.

- After cooking, remove the lid and paper towels, let the casserole sit uncovered for 15 minutes, and fluff the top layer with a fork if desired.
