Instructions

1-Whisk together: 1 large egg, 1/3 cup whole milk, 1 teaspoon fine sea salt, 1/2 teaspoon garlic powder, 1/2 teaspoon freshly ground black pepper, 1/2 teaspoon ground cayenne, and 1 tablespoon granulated sugar in a large bowl until well combined.

2-Add: 1/2 cup all-purpose flour and 1 teaspoon baking powder; whisk until just mixed, being careful not to over-stir.

3-Gently fold in: 1 1/2 cups corn kernels, 1/4 cup chopped scallions, and 1 cup shredded cheese to keep the batter light and airy.

4-Heat vegetable oil in a skillet over medium-low heat until it’s shimmering and ready for frying.

5-Spoon the batter into the skillet, flattening each scoop into a patty shape for even cooking.

6-Fry 3-4 fritters at a time for about 2 minutes per side, or until they’re golden brown and crispy on the outside.

7-Drain them briefly on a cooling rack and serve warm, perhaps with a simple dipping sauce made from mayo, fresh herbs, and spices.
