Ingredients

– 2 3/4 cups (343.75 g) flour

– 3 tablespoons (36 g) sugar

– 2 teaspoons (6.22 g) yeast

– 1 1/4 teaspoons (7.5 g) salt

– 1 cup (227 g) unsalted butter, cold

– 1/2 cup (122 g) milk

– 1/4 cup (59.15 g) water

– 1 large egg (44 g)

Instructions

1-First, mix the flour, sugar, yeast, and salt in a bowl. Then, cut in the cold butter until you have pea-sized pieces, which is key for texture.

2-In another bowl, whisk together the milk, water, and egg before adding it to the dry mix and stirring until a dough forms.

3-Wrap the dough and chill it for at least 30 minutes to let it rest.

4-Once chilled, roll it into a rectangle about 1/2-inch thick on a floured surface.

5-Fold the dough into thirds, rotate it, and roll again; repeat 3 to 5 times for extra flakiness.

6-After another chill, divide the dough into portions and roll each into a thin rectangle.

7-Cut into triangles, roll from the wide end, and shape into crescents.

8-Let them rise, then bake at 400°F until golden and puffed.
