0.5 pound (about 225 grams) penne pasta or other short pasta

15 ounces (approximately 425 grams) fire-roasted diced tomatoes

2 cups (about 480 ml) chicken broth

2 ounces (about 57 grams) cream cheese

1 diced yellow onion

3 sliced green onions for garnish

Olive oil amount as needed for cooking

Butter amount as needed for cooking

Cajun seasoning made with: smoked paprika, oregano, thyme, garlic powder, onion powder, cayenne pepper, black pepper, and salt

Instructions

1-First, mix the Cajun seasoning ingredients together in a small bowl. Coat the 1 pound of cubed chicken breasts evenly with this seasoning for that signature spicy kick.

2-Second, heat olive oil and butter in a deep skillet over medium-high heat. Add the seasoned chicken and cook until it’s browned on the outside, but not fully done inside this keeps it tender.

3-Third, add the diced yellow onion to the skillet and sauté until it’s softened, while scraping up any bits from the bottom of the pan for extra flavor.

4-Fourth, stir in the 0.5 pound of penne pasta, 15 ounces of fire-roasted diced tomatoes with their juices, and 2 cups of chicken broth. Bring everything to a boil, then reduce the heat to a simmer, cover, and cook for about 10 minutes. Stir often to prevent sticking.

5-Fifth, once the pasta is tender and the sauce has thickened, add the 2 ounces of cream cheese in chunks. Stir until it’s fully melted and the sauce is creamy smooth.

6-Finally, garnish with 3 sliced green onions and serve hot. This method ensures a hearty meal that’s ready fast, with tips like using a 4-quart skillet to avoid messes.
