πŸ₯” Cowboy Butter Potatoes Recipe delivers crispy-sided, tender roasted potatoes infused with savory, bold flavors.
🧈 Perfect for a hearty side dish, it’s easy to prepare and adds a rich buttery twist to your meal.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

– 1.5 pounds red baby potatoes, halved (you can swap in yellow baby potatoes, regular red potatoes, or russets for variety)

– 1 teaspoon fresh minced parsley for garnish

– 4 tablespoons unsalted butter, melted (the base of the cowboy butter)

– 1 clove garlic, minced (or 1/4 teaspoon garlic powder for a quick alternative)

– 1 teaspoon Dijon mustard adds a tangy kick

– 1 tablespoon fresh squeezed lemon juice brightens up the flavors

– 1 tablespoon chopped fresh parsley (or 1 teaspoon dried parsley for convenience)

– 1/2 teaspoon paprika (smoked paprika works too for a deeper taste)

– 1/4 teaspoon crushed red pepper flakes optional

– Salt to taste (around 1/4 teaspoon to start)

– Black pepper to taste (about 1/4 teaspoon for that classic spice)

– 1.5 pounds red baby potatoes

– 4 tablespoons unsalted butter, melted

– Garlic

– Mustard

– Herbs

Instructions

1-In a small bowl, stir together the 4 tablespoons melted unsalted butter, 1 clove minced garlic, 1 teaspoon Dijon mustard, 1 tablespoon fresh squeezed lemon juice, 1 tablespoon chopped fresh parsley, 1/2 teaspoon paprika, 1/4 teaspoon crushed red pepper flakes, and salt and black pepper to taste. Set it aside for that flavor infusion.

2-Preheat your oven to 425Β°F (220Β°C) to get it nice and hot.

3-Place the 1.5 pounds halved red baby potatoes in a 9Γ—13 baking dish, season with salt and pepper, then pour the cowboy butter over them and toss to coat evenly.

4-Bake for 35 to 45 minutes, tossing halfway through, until the potatoes are crispy on the edges and cooked inside.

5-Sprinkle with 1 teaspoon fresh minced parsley before serving, and enjoy right away.
