  • Total Time: 1 hour 15 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

1 pound lean ground beef

Β½ pound chopped bacon

1 cup diced yellow onion

3 teaspoons minced garlic

1 tablespoon chili powder

1 teaspoon salt

Β½ teaspoon ground black pepper

3 (15-ounce) cans pork and beans

1 (15-ounce) can cannellini beans

1 (15-ounce) can dark kidney beans

1 cup barbecue sauce

Β½ cup ketchup

ΒΌ cup brown sugar

2 tablespoons yellow mustard

1 tablespoon Worcestershire sauce

1 tablespoon apple cider vinegar

Instructions

1-Cook the chopped bacon in a large Dutch oven over medium heat until crisp, about 7 minutes, then remove it with a slotted spoon and set aside.

2-Leave about 2 tablespoons of bacon grease in the pot and discard the rest, then add the diced onion and cook until nearly tender, about 4 minutes.

3-Add the garlic and ground beef, cooking and crumbling until the beef is fully browned, which takes about 7-10 minutes, then drain any excess grease.

4-Stir in the cooked bacon, chili powder, salt, black pepper, all the beans (pork and beans not drained, cannellini and kidney beans drained), barbecue sauce, ketchup, brown sugar, yellow mustard, Worcestershire sauce, and apple cider vinegar.

5-Transfer the pot to the preheated oven and bake uncovered for 45 minutes, letting the flavors meld together.

Notes

🫘 Using both kidney and cannellini beans creates the perfect texture combination – creamy cannellini beans and firm kidney beans that hold their shape during baking
🍯 Adjust the sweetness to your preference by varying the brown sugar amount or substituting with honey, molasses, or maple syrup for different flavor profiles
πŸŒͺ️ Add 1-2 teaspoons of liquid smoke to enhance the smoky flavor if you’re not cooking outdoors or want that authentic barbecue taste
