Instructions
1. Preheat the oven to 300°F (150°C).
2. Pat ribs dry and, if desired, rub with olive oil. Season generously with salt, pepper, and optional spices.
3. Arrange ribs in a single layer on a foil-lined pan, fattier side up.
4. Cover tightly with foil and bake for 2 to 2.5 hours, adding 30 minutes for very large ribs.
5. Remove from oven, carefully lift foil to avoid steam, and drain excess liquid.
6. Brush BBQ sauce generously over the ribs.
7. Lower oven to 275°F (135°C) and bake uncovered for 1 hour, checking tenderness after 20 minutes for smaller ribs.
8. Optional: Broil for 3-5 minutes to caramelize sauce.
9. Let ribs rest 5-10 minutes before serving.
