1/2 cup (80 g) crushed chocolate sandwich cookies for filling
28 mini chocolate sandwich cookies for garnish
2 cups crushed chocolate sandwich cookies
8 oz cream cheese
3/4 cup granulated sugar
Instructions
1-Mix the 2 cups (320 g) crushed chocolate sandwich cookies with 1/4 cup (57 g) melted butter.
2-Press this crumb mixture into the bottom of 28 two-ounce plastic cups.
3-Beat the 8 oz (227 g) cream cheese and 3/4 cup (150 g) granulated sugar until smooth.
4-Add 1 1/2 cups (357 g) heavy cream and 2 tsp vanilla extract, then whip until light and fluffy.
5-Fold in 1/2 cup (80 g) crushed chocolate sandwich cookies.
6-Pipe the mixture into the cups, filling them about three-quarters full.
7-Top each with a mini cookie or extra crumbs, then seal with lids and chill.
