Instructions

First Step: Gather and prep. Remove cod fillets from the fridge 10-15 minutes before cooking to take the chill off. Preheat your oven to 400°F and line a baking sheet with parchment paper for easy cleanup. Pat each fillet dry with paper towels to remove surface moisture this helps seasonings stick and promotes a firmer exterior.

Third Step: Butter and lemon. In a separate small bowl mix 2 tablespoons melted butter with 2 teaspoons fresh lemon juice. If you prefer less butter, substitute olive oil or use 1 tablespoon butter plus 1 tablespoon oil.

Fourth Step: Season the fillets. Place fillets skin-side down (if skin-on) on the prepared sheet. Brush each fillet with the butter-lemon mixture, then sprinkle the seasoning mix evenly on top. Use your hands or a spoon to lightly press the spices into the fish so they adhere.

Fifth Step: Bake. Slide the baking sheet into the middle rack of the preheated oven. Bake at 400°F for 12-15 minutes. Thicker fillets up to 1.25 inches may need 15-18 minutes. You want the flesh to flake easily with a fork and register 145°F at the thickest part.

Sixth Step: Optional broil. For a lightly browned top, switch to broil for the last 1 to 2 minutes watch closely so the spices do not burn.

Final Step: Rest and serve. Remove the fillets from the oven and let them rest for 2 minutes.
