Measure 3 tablespoons tahini, 2 tablespoons extra-virgin olive oil, 1/2 teaspoon ground cumin and 1 teaspoon kosher salt. Have a food processor or high-speed blender, a spatula and a bowl ready.

With the processor running on low, slowly drizzle in 2 tbsp extra-virgin olive oil and 2 4 tbsp cold water or aquafaba until the hummus reaches desired creaminess.
5-Final Touches: For a lighter or lower-calorie classic hummus, use more aquafaba or water and reduce oil. Continue processing for 1 2 minutes to fully emulsify for a silky result. Taste and adjust. Sample the hummus and adjust salt, lemon or cumin.
If you prefer brighter acidity, add an extra 1/2 tbsp lemon juice; for more nuttiness, stir in a touch more tahini. Texture tweaks. If the hummus seems grainy, process an additional 1 2 minutes, or add 1 2 tbsp warm water to loosen it. Plate and garnish. Spoon hummus into a shallow bowl, use the back of a spoon to create a shallow well, drizzle 1 tsp extra-virgin olive oil over the top, and finish with a dusting of smoked paprika, toasted sesame seeds or chopped parsley.
