  • Total Time: 2 hours 12 minutes
  • Yield: About 24 cookies (3 inches each) with 1.5 cups of icing 1x

Ingredients

Scale

2 and 1/4 cups (281g) all-purpose flour, plus extra for rolling and work surface

1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 cup (12 tablespoons; 170g) unsalted butter, room temperature

3/4 cup (150g) granulated sugar

1 large egg, room temperature

2 teaspoons pure vanilla extract

1/4 to 1/2 teaspoon almond extract (optional)

3 cups (360g) confectioners’ sugar

1/2 teaspoon pure vanilla extract (optional, omit and replace with water for white icing)

2 teaspoons light corn syrup

4.5 to 5 tablespoons (67 75 ml) room temperature water

A pinch of salt

Optional: food coloring and sprinkles for decorating

Instructions

1-Getting started with Christmas cookies: is easier than you think, beginning with mixing your dry ingredients. In a bowl, combine the flour, baking powder, and salt to create a solid base for your dough. This step ensures even distribution of leavening agents, helping your cookies rise just right.

2-Next: beat the butter and sugar until they’re creamy and light. Add the egg, vanilla extract, and almond extract if you’re using it, mixing until smooth. Combine the wet and dry mixtures to form a soft dough, adding a bit more flour if it feels sticky. For the full process, roll the dough to about 1/4-inch thickness on floured parchment, stack with parchment between layers, and chill for 1 2 hours or up to 2 days.

3-Prepping and Baking Steps: 1. Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper. 2. Cut the chilled dough into shapes and space them 3 inches apart on the sheets. 3. Bake for 11 12 minutes until the edges are lightly brown, then cool on the sheets for 5 minutes before moving to wire racks.

4-For the icing: mix confectioners’ sugar, vanilla, corn syrup, water, and salt until it’s thick and spreadable, adding food coloring if desired. Decorate by dipping or piping, and let it dry for 24 hours before stacking. The whole process takes about 2 hours total, including chilling and setting time, with actual baking around 12 minutes.

Notes

🧈 Use room temperature butter around 65°F (18°C) for easier mixing and better texture.
❄️ Chill rolled dough stacked with parchment paper to prevent sticking and save fridge space.
🎨 Gradually add water to icing for best consistency; use gel food coloring to maintain icing texture.
