🍫 Chocolate Chip Zucchini Bars combine the sweetness of chocolate chips with moist, shredded zucchini for a delicious treat.
🌿 These bars are an easy way to incorporate veggies into a dessert, making them both tasty and slightly nutritious.

  • Total Time: 55 minutes
  • Yield: 12-16 bars

Ingredients

– 2 cups all-purpose flour

– 1 ½ teaspoons cinnamon

– 1 teaspoon baking powder

– ½ teaspoon salt

– 1 cup granulated sugar

– ¾ cup vegetable oil

– 3 large eggs

– 1 ½ cups shredded zucchini

– 1 ½ cups chocolate chips

Instructions

1-First, preheat your oven to 350°F and grease a 10x15x1 jelly roll pan or use nonstick cooking spray; a 9×13 pan works too, but keep an eye on the baking time.

2-Next, in a small bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.

3-Then, in a larger bowl, stir the sugar, oil, and eggs until the mixture is smooth, and gradually mix in the dry ingredients.

4-After that, fold in the shredded zucchini to add moisture, followed by stirring in the chocolate chips for that irresistible sweetness.

5-Spread the batter evenly into your prepared pan for even baking.

6-Bake for 28 to 35 minutes, or until/sort a toothpick inserted in the center comes out clean, then let it cool completely before slicing into bars.

Notes

🥒 Use one large zucchini or two smaller ones for the shredded zucchini quantity.
🍫 Regular-sized chocolate chips work as a substitute for mini chips.
🍽️ A 10x15x1 jelly roll pan is ideal; if using a 9×13 pan, adjust baking time accordingly.
