– 1 tablespoon cornstarch

– 1 pound steak (sirloin recommended; tenderloin, NY strip, flank steak also work), trimmed of excess fat and thinly sliced into ¼ to ½-inch strips

– ½ cup beef broth (can substitute chicken broth or bouillon cube dissolved in water)

– 3 tablespoons honey

– 3 tablespoons oyster sauce

– 2 tablespoons Shaoxing wine or Chinese cooking wine (substitute dry sherry or mirin)

– 1 tablespoon mirin

– 1 ¼ teaspoon coarsely ground black pepper

– ¼ teaspoon kosher salt

– 3 tablespoons peanut oil (or neutral oil like canola, grapeseed, avocado)

– 1 medium white onion (yellow or red onion can be used), peeled and medium diced

– 2 small bell peppers, seeded and medium diced (any color, often one green and one red)

– 2 garlic cloves, peeled and minced (garlic powder can substitute)

– 1 ½ teaspoons fresh ginger, peeled and minced or grated (ground ginger or ginger paste can substitute)

Instructions

1-First, prepare all ingredients by thinly slicing the steak against the grain and dicing the onions and peppers. Mince the garlic and ginger, and mix the cornstarch with water for the sauce.

2-Heat the oil in a wok or skillet over high heat, then add garlic and ginger for a quick stir-fry until they’re fragrant.

3-Add the sliced steak and cook it fast for 3-4 minutes until it’s browned but still juicy.

4-Toss in the onions and peppers, stirring for another 2-3 minutes until they soften up.

5-Pour in the sauce ingredients and let them simmer together for 1-2 minutes to blend the flavors.

6-Stir in the cornstarch slurry to thicken everything, cooking just until the sauce coats the ingredients perfectly.

7-Finally, take it off the heat and serve it hot with your choice of sides.
