1.5 pounds boneless skinless chicken thighs
24 mini soft corn tortillas, warmed
2 cups pico de gallo or onion salsa
1/2 cup fresh cilantro, chopped
6 lime wedges

For the Marinade:
4 tablespoons orange juice
1/4 cup olive oil
1ยฝ tablespoons fresh lime juice
3 cloves garlic, minced
1ยฝ tablespoons chili powder
2 teaspoons ground cumin
2 teaspoons smoked paprika
1/4 teaspoon cinnamon
1 teaspoon salt
3/4 teaspoon black pepper
Instructions
1. In a bowl or resealable bag, combine all marinade ingredients. Add chicken and marinate in the refrigerator for at least 1 hour, up to 6 hours or overnight.
2. Preheat the grill to medium-high heat (around 425ยฐF). Lightly grease the grill grates.
3. Remove chicken from marinade, letting excess drip off. Grill for 4-6 minutes per side until cooked through and slightly charred. Chicken should reach an internal temperature of 165ยฐF.
4. Allow chicken to rest for 5 minutes, then chop into small pieces.
5. Warm tortillas on a skillet, griddle, or grill. Optionally toast them lightly or double stack for sturdiness.
6. Assemble tacos: place chopped chicken on tortillas, add pico de gallo, cilantro, and a squeeze of lime. Garnish with desired toppings. Serve immediately with lime wedges on the side.
