Approximately 2 to 2.5 pounds boneless, skinless chicken breast, cut into 1 to 1.5-inch pieces
Marinade: garlic cloves, dried oregano, rosemary, sweet paprika, kosher salt, black pepper, Greek extra virgin olive oil, dry white wine, lemon juice, bay leaves
Pita bread for serving
Tzatziki sauce made from strained yogurt, cucumber, garlic, olive oil, vinegar, and seasoning
Fresh toppings: sliced tomatoes, cucumbers, onions, Kalamata olives
Optional sides: Greek salad, rice pilaf, lemon potatoes, or a mezze platter

Instructions

1. Combine garlic, oregano, rosemary, paprika, salt, pepper, olive oil, white wine, and lemon juice to form the marinade. Pulse until well blended. Add bay leaves directly to the chicken.
2. Coat chicken pieces with the marinade and refrigerate for at least 30 minutes, ideally 2 hours or overnight.
3. Soak wooden skewers in water beforehand. Thread marinated chicken onto skewers, leaving space between pieces.
4. Preheat grill or griddle to medium-high heat. Grill skewers for about 5-10 minutes, turning to brown evenly, until the chicken reaches an internal temperature of 160°F to 165°F.
5. Brush pita bread with olive oil, season with salt and oregano, and briefly grill before serving.
6. Assemble by spreading tzatziki on pita, topping with chicken pieces, sliced tomatoes, cucumbers, onions, and olives. Drizzle with olive oil and lemon juice if desired.
