2 large chicken breasts

1/2 teaspoon garlic powder

Salt and pepper to taste

Flour for dredging

1 tablespoon olive oil

2 tablespoons butter (divided)

3 cloves garlic minced

1/2 cup dry white wine

1/4 cup chicken broth

1/4 teaspoon Italian seasoning

1 cup heavy or whipping cream

2 cups loosely packed fresh baby spinach

1/2 cup freshly grated Parmesan cheese

Instructions

1-First, cut the 2 large chicken breasts in half lengthwise to create 4 thinner pieces for even cooking.

2-Season both sides with 1/2 teaspoon garlic powder, salt, and pepper to taste, then dredge in flour for a nice golden crust.

3-Heat 1 tablespoon olive oil and 1 tablespoon of the 2 tablespoons butter in a skillet over medium-high heat, then cook the chicken for 4-5 minutes per side until it’s golden and set aside.

4-Add the remaining 1 tablespoon butter and 3 cloves minced garlic to the skillet; cook for about 30 seconds until fragrant.

5-Pour in 1/2 cup dry white wine, 1/4 cup chicken broth, and 1/4 teaspoon Italian seasoning; let it cook for 3-5 minutes until reduced.

6-Stir in 1 cup heavy cream and let it bubble for 2 minutes, then add 2 cups loosely packed fresh baby spinach until it wilts.

7-Return the chicken to the skillet and cook over medium heat for 4-5 minutes until the chicken is fully cooked and the sauce thickens, then sprinkle 1/2 cup freshly grated Parmesan cheese on top.
