1 tablespoon fajita seasoning (made with 2 teaspoons chili powder, 1 teaspoon smoked paprika, 1/4 teaspoon onion powder, 1/4 teaspoon garlic powder, 1/4 teaspoon cumin, 1/8 teaspoon cayenne, 1/2 teaspoon sugar, and 1/2 teaspoon salt)

1 cup shredded cheddar cheese

1/2 cup low-fat sour cream

2 tablespoons olive oil

1 tablespoon cooking oil

1 boneless skinless chicken breast (weighing about 0.75 pounds)

1 diced green bell pepper

1 diced yellow onion

15 ounces canned fire-roasted diced tomatoes

4 ounces cream cheese

8 ounces dried pasta of any shape

2 sliced green onions

Instructions

1-Prepare all ingredients: Prepare all ingredients by dicing cooked chicken, slicing peppers and onion, and mincing garlic.

2-Cook pasta: Cook pasta according to package instructions until al dente, then drain and set aside.

3-Heat olive oil: Heat olive oil in a large pan over medium heat and sauté onions and garlic until translucent, about 3 minutes.

4-Add peppers: Add sliced bell peppers and continue cooking until tender, approximately 5 minutes.

5-Stir in chicken and seasoning: Stir in diced chicken and fajita seasoning, cooking until heated through and well coated.

6-Mix in pasta and cheese: Lower heat and mix in cooked pasta, shredded cheese, and sour cream until creamy and combined.

7-Adjust seasoning: Adjust seasoning with salt and pepper as needed.

8-Serve hot: Serve hot, garnished with fresh cilantro or green onions as desired. For dietary tweaks, substitute ingredients like gluten-free pasta or vegan cheese in each step.
