Ingredients

– 2 tablespoons olive oil

– 3-4 carrots, chopped (about 2 cups)

– 1 quart low-sodium chicken broth

– 2 cups water (or additional broth)

– 1 pound boneless, skinless chicken breasts

– 12 ounces frozen corn (no need to thaw) or 2 lightly rounded cups fresh corn

– 10 ounces frozen creamed corn

– Β½ cup small egg or Amish noodles (optional; omit for gluten-free)

– 3 hard-boiled eggs, chopped

– ΒΌ cup chopped fresh parsley

– Kosher salt and freshly ground pepper to taste

– Β½ teaspoon sugar (optional; it brings out the corn’s sweetness)

Instructions

1-Heat the olive oil in a large pot over medium heat and sautΓ© the onion, celery, and carrots for about 5 minutes until they soften.

2-Add the bay leaves, saffron or its substitute, chicken broth, water, and chicken breasts. Bring it to a boil, then simmer gently for 15-20 minutes until the chicken cooks through.

3-Remove the chicken, let it cool, and shred it before returning it to the pot later.

4-Stir in the frozen corn, frozen creamed corn, and noodles if you’re using them, then simmer for another 15 minutes until everything blends well.

5-Once the noodles are nearly done, add the shredded chicken back in and cook a bit longer until it’s all warm and ready.

6-Take out the bay leaves, then mix in the chopped hard-boiled eggs, parsley, sugar if you like, and seasonings to taste.

7-Serve it hot, and feel free to garnish with extras for a personal touch.
