Ingredients
– 6 slices bacon, cut into small pieces
– 2 medium chicken breasts, cut into bite-size pieces
– 1 large clove garlic, minced
– 1/2 cup chicken broth
– 1 cup heavy/whipping cream
– 1/4 teaspoon Italian seasoning
– 1 pound uncooked potato gnocchi (shelf-stable from pasta aisle)
– 1/2 cup freshly grated parmesan cheese
– Salt and pepper to taste
Instructions
1-First, fry the bacon in a deep skillet over medium-high heat until it’s crispy, which takes about 10 minutes. Once done, remove it and keep 1 tablespoon of the fat in the skillet; toss the rest.
2-Next, add the chicken pieces to that same skillet and cook for 2-3 minutes, stirring until they’re white on the outside. If they stick, give them a bit more time to release naturally.
3-Stir in the minced garlic to build those flavors.
4-Reduce the heat to medium, then add the chicken broth, heavy cream, Italian seasoning, uncooked gnocchi, and the cooked bacon. Stir everything well to combine.
5-Cover the skillet and let it cook for 4 minutes so the gnocchi can soften and thicken the sauce.
6-Uncover and cook for a few more minutes, stirring occasionally, until the sauce reaches your preferred thickness.
7-Finally, remove from heat, stir in the parmesan cheese, and season with salt and pepper. Serve it up hot and enjoy!
