– 12 slices of baguette
– 4 tablespoons of olive oil, divided
– 1 cup of goat cheese (approximately 1 teaspoon per slice of baguette)
– 2 cups of pitted and halved cherries
– 1 tablespoon of fresh thyme, plus more for garnish
– 2 tablespoons of cherry liqueur, brandy, or juice (optional)
– 2 tablespoons of balsamic vinegar
– Salt and pepper, to taste
– Honey, for serving
– Balsamic glaze, for serving
Instructions
1-Preheat the oven: Preheat the oven to 400 degrees Fahrenheit to get everything ready for roasting.
2-In a bowl: toss 2 cups of pitted and halved cherries with 2 tablespoons of olive oil, 2 tablespoons of cherry liqueur, brandy, or juice (if using), 2 tablespoons of balsamic vinegar, 1 tablespoon of fresh thyme, salt, and pepper to taste.
3-Arrange 12 slices: of baguette on a sheet pan and brush them with the remaining 2 tablespoons of olive oil.
4-Toast the baguette slices: in the oven on the lower rack for 7 minutes.
5-Meanwhile: spread the cherry mixture and its juices on a separate baking sheet lined with parchment paper, then roast on the upper rack for 5 to 7 minutes alongside the bread, until the cherries are tender and bubbling.
6-Remove both from the oven. Spread approximately 1 teaspoon of goat cheese on each of the 12 toasted baguette slices.
7-Top each crostini: with 2 to 3 cherry halves from the mixture.
8-Garnish: with additional fresh thyme, drizzle with honey and balsamic glaze, and season with salt and pepper to taste.
9-Serve immediately. Any extra roasted cherries can be saved for use in salads, yogurt, or ice cream.
