Ingredients
30 vanilla wafers
3 packages (8 ounces each) cream cheese at room temperature
1 cup sugar
4 eggs
2 tablespoons fresh lemon juice
Cherry pie filling
Instructions
1-Preheat the oven to 350 degrees Fahrenheit.
2-In a mixer, combine the cream cheese, sugar, eggs, and lemon juice until the mixture is smooth.
3-Line a muffin tin with cupcake liners.
4-Place one vanilla wafer at the bottom of each muffin cup.
5-Fill each muffin cup about three-quarters full with the cream cheese batter.
6-Bake the cupcakes one tray at a time for 20 to 22 minutes per tray.
7-Allow the cupcakes to cool; the centers may sink, which is normal.
8-Once cooled, add a scoop of cherry pie filling to the center of each cupcake.
9-Refrigerate for at least one hour before serving.
