🌮 Cheesy taco pasta delivers bold Mexican flavors in a quick, one-pan pasta dish that’s kid-approved and ready in just 25 minutes.
🧀 Ooey-gooey cheddar, savory beef, and zesty salsa create customizable comfort food perfect for busy weeknights or casual gatherings.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

– 1/2 pound large shells pasta

– 1 pound ground beef

– 2 tablespoons taco seasoning (or 1 packet)

– 3/4 cup water

– 1 cup jarred salsa

– 1 cup shredded cheddar cheese

Instructions

1-Step 1: Cook the Pasta Start by cooking your 1/2 pound of large shells pasta according to the package directions. Fill a large pot with water, bring it to a rolling boil, and add a generous pinch of salt. The salt flavors the pasta from the inside out. Add the pasta and cook until al dente usually 8 to 10 minutes depending on the brand. You want the pasta tender but still with a slight bite since it will absorb some sauce later. Once the pasta is cooked, drain it well in a colander. Don’t rinse it the starch left on the surface helps the sauce stick. Set the drained pasta aside while you prepare the beef mixture. Some cooks like to toss the drained pasta with a tiny bit of olive oil to prevent sticking, though this isn’t strictly necessary since you’ll be mixing it with sauce shortly.

2-Step 2: Brown the Ground Beef While the pasta cooks, heat a large, deep skillet (preferably 12 inches) over medium-high heat. A larger skillet gives you plenty of room to mix everything together later without losing flavor. Add the 1 pound of ground beef and break it apart with a wooden spoon or spatula as it cooks. You want to brown the meat evenly, which usually takes about 5 to 7 minutes. Cook until no pink remains and the beef is nicely browned with some caramelized bits on the bottom those bits add tremendous flavor! Once fully cooked, drain the excess fat from the pan. If you’re using leaner beef (90/10 or higher), you might not need to drain at all. Return the skillet to the heat.

3-Step 3: Add Seasoning and Create the Sauce Now comes the flavor magic. Add the 2 tablespoons of taco seasoning (or one packet) to the browned beef. Stir it around for about 30 seconds to toast the spices slightly this releases their essential oils and intensifies the flavor. Next, pour in the 3/4 cup of water and stir well to combine. The water will bubble up and start to boil. Let this mixture cook for 2 to 3 minutes, stirring occasionally, until the water has mostly evaporated. What you’re left with is beautifully seasoned beef coated in a light, flavorful glaze. The seasoning has now penetrated the meat rather than just sitting on top. This technique is the same one used in traditional taco preparation and makes all the difference in your final dish. According to cheesy taco pasta recipes, this step is crucial for developing that authentic taco taste that kids and adults love.

4-Step 4: Combine Everything Return the cooked and drained pasta to the pot (or add it directly to your deep skillet if it’s large enough). Pour in the 1 cup of jarred salsa and the 1 cup of shredded cheddar cheese. The residual heat from the pasta and beef will start melting the cheese immediately. Stir everything together using a folding motion to distribute the ingredients evenly. You want every piece of pasta coated in that beautiful mixture of seasoned beef, salsa, and melted cheese. Keep stirring for about a minute until the cheese is completely melted and everything is well combined. If the mixture seems too thick or dry, you can add a splash of water, milk, or broth to reach your desired consistency. Just add a tablespoon at a time you can always add more, but you can’t take it back out!

5-Step 5: Serve and Enjoy Your cheesy taco pasta is now ready to serve! Transfer it to serving bowls immediately. The dish is best enjoyed hot and fresh when the cheese is at its most melty and luxurious state. For an extra special presentation, top with crunchy tortilla chips, a dollop of sour cream, diced fresh tomatoes, sliced green onions, or a sprinkle of extra cheese. This recipe serves 4 to 6 people generously, depending on appetites and whether you’re serving sides alongside. A simple green salad or steamed vegetables make excellent accompaniments to round out the meal.
