1 cup crumbled cotija cheese

Instructions

1-Step 1: Mix the Marinade Combine all marinade ingredients except the steak in a medium bowl. This includes the jalapeno, garlic, cilantro, olive oil, citrus juices, vinegar, and spices. The mix brings a bright, smoky taste that elevates the beef.

2-Step 2: Marinate the Steak Place the steak in a large baking dish or gallon-size zip-lock bag, pour the marinade over it, and coat evenly. Refrigerate for 2 to 4 hours, but not longer than 8 to keep the texture just right.

3-Step 3: Prep for Grilling Remove the steak from the marinade, discard the excess, and pat it dry. Drizzle with olive oil and season with coarse salt and black pepper for that extra grill kick.

4-Step 4: Grill the Steak Preheat your grill or grill pan to medium-high heat, around 400-450°F. Grill the steaks with the lid closed for 4-8 minutes per side, depending on thickness about 4 minutes for skirt steak and 6-8 for flank steak.
