Ingredients
1 seeded and minced jalapeno
4 cloves garlic minced
1/2 cup chopped cilantro
1/3 cup olive oil
Juice of 1 orange
Juice of 1 lime
2 tablespoons white wine vinegar
2 teaspoons chili powder
1 teaspoon cumin for grilling
1 teaspoon oregano
1 teaspoon salt
1 teaspoon black pepper
1/4 teaspoon smoked paprika for grilling
2 pounds flank or skirt steak
16 warmed corn or flour tortillas
1/2 medium onion finely diced
1/2 cup chopped cilantro
1 cup crumbled cotija cheese
Lime wedges for serving
guacamole
pico de gallo
salsa
Instructions
1-Step 1: Mix the Marinade Combine all marinade ingredients except the steak in a medium bowl. This includes the jalapeno, garlic, cilantro, olive oil, citrus juices, vinegar, and spices. The mix brings a bright, smoky taste that elevates the beef.
2-Step 2: Marinate the Steak Place the steak in a large baking dish or gallon-size zip-lock bag, pour the marinade over it, and coat evenly. Refrigerate for 2 to 4 hours, but not longer than 8 to keep the texture just right.
3-Step 3: Prep for Grilling Remove the steak from the marinade, discard the excess, and pat it dry. Drizzle with olive oil and season with coarse salt and black pepper for that extra grill kick.
4-Step 4: Grill the Steak Preheat your grill or grill pan to medium-high heat, around 400-450°F. Grill the steaks with the lid closed for 4-8 minutes per side, depending on thickness about 4 minutes for skirt steak and 6-8 for flank steak.
5-Step 5: Rest and Slice Let the steak rest for 5 minutes before slicing into bite-sized pieces. This step locks in the juices for maximum flavor.
6-Step 6: Assemble the Tacos Warm the tortillas and fill them with the sliced carne asada. Top with diced onion, cilantro, cotija cheese, and a squeeze of lime. Add optional toppings like guacamole or salsa for extra flair.

🌡️ Use a meat thermometer to monitor doneness – medium-rare is 130-135°F for the most tender carne asada
🌮 Keep tortillas warm and flexible by wrapping them in a clean towel inside a sealed bag while grilling the steak
⏰ Avoid marinating more than 8 hours as the acidity can break down the meat proteins and create a mushy texture
