Ingredients

– 2 lbs sweet potatoes cut into 1-inch cubes for main base for natural sweetness and nutrients

– 2 tablespoons olive oil for roasting and caramelization

– 1 teaspoon kosher salt

– 2 tablespoons pure maple syrup for glossy, caramel-like finish

– ½ teaspoon ground cinnamon

– Optional: chopped candied pecans or candied walnuts for garnish

Instructions

1-Place the 2 lbs of sweet potato cubes in a single layer on the prepared baking sheet.

2-Drizzle with 2 tablespoons of olive oil and toss to coat evenly, then sprinkle with 1 teaspoon of kosher salt.

3-Roast in the oven for 20 minutes until they start to soften.

4-While that’s happening, stir together 2 tablespoons of pure maple syrup and ½ teaspoon of ground cinnamon in a small bowl.

5-Remove the sweet potatoes from the oven, drizzle the maple cinnamon mixture over them, and stir to coat evenly.

6-Return to the oven and bake for another 5 to 10 minutes, stirring halfway through, until they’re tender and nicely glazed.

7-Finally, garnish with optional chopped candied pecans or candied walnuts if you want an extra crunch, and serve right away.
