1-First Step: Mix the peanut butter filling: Start by beating the softened butter and creamy peanut butter together until the mixture looks smooth and creamy. This is the base of your Buckeye Recipe, so take your time here and scrape down the bowl as needed. Once that mixture is well blended, stir in the brown sugar, salt, and vanilla extract until everything is evenly combined.

2-Second Step: Add the powdered sugar slowly: Gradually add the powdered sugar and mix until it is fully incorporated. Add it a little at a time so the dough does not turn dry or crumbly. When the mixture comes together, it should feel soft, thick, and easy to shape. If it seems sticky, sprinkle in a bit more powdered sugar, one tablespoon at a time.

3-Third Step: Shape and chill the balls: Roll the peanut butter mixture into tablespoon-sized smooth round balls. Place them on a wax-paper lined cookie sheet, then freeze for 15 to 20 minutes. This short chill helps the centers firm up so they are easier to dip without falling apart. If you do not have freezer space, you can refrigerate them overnight covered tightly with plastic wrap.

4-Fourth Step: Melt the chocolate: While the centers chill, melt the semisweet chocolate chips with the coconut oil or vegetable shortening. Use the microwave in 25-second intervals, stirring after each round until the chocolate is smooth. The added oil helps the coating stay glossy and makes dipping much easier. If you are using chocolate melting wafers, keep in mind they may be a little thicker.

5-Fifth Step: Dip each buckeye: Remove the chilled peanut butter balls from the freezer and spear each one with a toothpick. Dip each ball about 75 percent into the melted chocolate, leaving a little peanut butter showing at the top. That exposed part gives buckeyes their signature look and helps them resemble the nut from the Ohio buckeye tree. Return each dipped piece to the cookie sheet as you go.

6-Sixth Step: Finish and serve: Pull out the toothpick and smooth the hole with your fingers or a warm spoon to hide the mark. Let the chocolate harden at room temperature, or refrigerate the tray if you want them to set faster. Once firm, your buckeyes are ready to enjoy.
