Ingredients

– 390 g (3 ΒΌ cups) All-purpose flour

– 320 g (1 Β½ cups) Dark brown sugar

– 15 g (1 tbsp + ΒΎ tsp) Baking powder

– 1 teaspoon Kosher salt

– 1 tablespoon Cinnamon

– 2 teaspoons Cardamom

– 1 teaspoon Ginger

– 1 teaspoon Allspice

– 1 teaspoon Nutmeg

– 1 teaspoon Cloves

– 140 g (10 tablespoons) Unsalted butter at room temperature

– 100 g (Β½ cup) Neutral oil

– 283 g (1 ΒΌ cups) Whole milk at room temperature

– 2 Eggs at room temperature

– 1 tablespoon Vanilla extract

– 227 g (16 tablespoons) Unsalted butter at room temperature for the cream cheese frosting

– 12 oz (1 Β½ blocks) Cold cream cheese

– 340 g (3 cups) Sifted powdered sugar

Instructions

1-Preheat your oven: Preheat your oven to 325 degrees F and grease and line two 9-inch cake pans with parchment paper. Soak cake strips in ice water to help keep the cakes flat while baking.

2-In a stand mixer bowl with a paddle attachment: combine the flour, brown sugar, baking powder, salt, and spices until well mixed.

3-Add the cubed butter and mix on low speed until the mixture resembles wet sand. Then, add the oil, milk, eggs, and vanilla extract, and mix until just combined for a smooth batter.

4-Divide the batter evenly between the two pans and wrap the soaked cake strips around the pans to prevent doming.

5-Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. Turn the cakes out onto a wire rack to cool, then wrap and freeze them for at least two hours before decorating to help the frosting set.

6-For the frosting, beat the butter and cream cheese on high speed until smooth. Slowly add the powdered sugar on low speed until combined, then mix until smooth with no lumps.

7-Assemble the cake by spreading frosting on the first layer, placing the second layer on top, frosting the sides lightly, and decorating as desired. Sprinkle cinnamon on top before serving.
