🇵🇱 This traditional Polish recipe combines tender beans, flavorful kielbasa, and rich tomatoes for a satisfying and nourishing meal.

  • Total Time: 1 hour 55 minutes
  • Yield: 4 servings

Ingredients

– 1 cup of dried beans (such as black eyed peas)

– 6 cups of water for boiling the beans

– 1 tablespoon of butter, ghee, or cooking oil

– 1 cup of cubed Polish smoked kielbasa

– 1 medium chopped sweet onion

– 2 cloves of chopped garlic

– 1 bay leaf

– 3 allspice berries

– 2 cups of crushed tomatoes

– 1 tablespoon of tomato paste

– 3 teaspoons of marjoram

– Salt and pepper to taste

– A pinch of cayenne pepper for added heat (optional)

– 1 teaspoon of chopped parsley for finishing

Instructions

1-First: soak 1 cup of dried beans overnight in water, then rinse and boil them in 6 cups of fresh water for 60 to 90 minutes until tender.

2-In another pan, heat 1 tablespoon of butter or oil and brown 1 cup of cubed Polish smoked kielbasa for about 5 minutes, then set it aside.

3-Next, in the same pan, cook 1 medium chopped sweet onion until golden, which takes 3-4 minutes, and add 2 cloves of chopped garlic for another minute.

4-Combine the cooked sausage and onion-garlic mixture with the beans in the pot. Add 1 bay leaf, 3 allspice berries, 2 cups of crushed tomatoes, 1 tablespoon of tomato paste, 3 teaspoons of marjoram, and season with salt and pepper to taste.

5-Let the mixture simmer for 15 more minutes, and if you like some heat, toss in a pinch of cayenne pepper.

6-Finish with 1 teaspoon of chopped parsley and serve with crusty bread or rice for a complete meal.
